Summer Dessert Recipe from Neighbor Katie's Kitchen
Delicate meringues, heavy whipping cream & strawberries might just be the perfect summer dessert. I couldn't wait to share this simple recipe!

10 Meringues:
Broken into bite sized pieces

Whipped Cream:
1 cup (240 ml) heavy whipping cream
1/2 teaspoon pure vanilla extract
1 tablespoon granulated white sugar

Strawberries:
1 quart fresh strawberries
2 tablespoons granulated white sugar, or to taste

Eton Mess: Break five to six meringue cookies (use more or less if you like) into bite size pieces. Then fold the strawberries and meringue cookies into the whipped cream. Place in dessert bowls or long stemmed glasses. Serve immediately.

Ingredients

  • 4 Cups Strawberries Hulled and sliced
  • 2 Teaspoons of Sugar 1 Tablespoon Balsamic Vinegar
  • 1 Qt. Whipping Cream
  • 2 Teaspoon pure vanilla extract
  • 10 Small meringue cookies broken to pieces and crumbled

Toss the strawberries with sugar and balsamic vinegar and set aside. Whip Cream with vanilla till soft peaks are formed but not stiff. Once strawberries have let out their juice gently fold them and the meringue crumbles into the whipped cream being careful to not over mix. Divide into vessels and serve immediately.
